Ingredients (for 1 person – 2 crepes)
- 100 g egg white
- 30 g oat flour (also flavored)
- 40 g low-fat Greek yogurt (0% or 2%)
- 1 teaspoon honey or erythritol
- Cinnamon or vanilla flavoring to taste
- For filling: fresh fruit and yogurt
In a bowl, mix the egg white, oat flour, yogurt, sweetener, and flavorings until you obtain a smooth batter.
Procedure
Heat a lightly greased non-stick pan.
Pour half the batter, cook for 1–2 minutes per side, then repeat with the rest.
Fill with Greek yogurt and fresh fruit.
Serve with a drizzle of honey or dusted cocoa.
